Why does it sway so much at higher speeds..seems weird

What were you driving before? Give it a couple thousand miles to adjust to it.

I have ridden it a couple of times. I agree the steering is sensitive. You will get used to it.

my assisted steering seems to be causing this to happen when I have cruise control on.

Turn it off then. Mine feels unsettled when lane centering is on.
